What is Chia Seeds?
 
Chia Seeds are the edible seeds of Salvia hispanica, a flowering plant in the mint family. Chia seeds are oval and grey with black and white spots, having a diameter around 2 millimetres (0.08 in). The seeds are hygroscopic, absorbing up to 12 times their weight in liquid when soaked and developing a mucilaginous coating that gives chia-based foods and beverages a distinctive gel texture. The nutritional make-up of chia seeds, being rich in poly-unsaturated omega-3 fatty acids, protein and fibre, makes them especially suited for helping to stabilize blood-sugar levels. Including chia seeds in your diet appears to have cardio-protective benefits, this may be thanks to their poly-unsaturated fat content, high fibre levels and anti-inflammatory properties. Chia seeds are a rich source of minerals, which are known to be beneficial for bone health, including calcium, magnesium and phosphorus. A 25g portion of chia seeds contains approximately 158mg of calcium which makes a significant contribution when compared to the equivalent amount of milk.  Chia seeds make a wonderful healthy creamy pudding/breakfast that is vegan and gluten free.1/4 Cup cacao powder, 3-5 Tbsp maple syrup, 1/2 tsp ground cinnamon, pinch of salt, vanilla extract. 1 1/2 cups coconut or almond milk, 1/2 cup Chia Seeds. Mix the coacao powder, maple syrup, cinnamon, salt and vanilla and whisk until smooth, add the Chia seeds and whisk to combine, leave in fridge for 3-5 hours, will last 4-5 days in the fridge.
 
Where does Chia seeds come from?
 
Its origin is believed to be in Central America where the seed was a staple in the ancient Aztec diet. The seeds of a related plant, Salvia columbaria (golden chia), were used primarily by Native Americans in the southwestern United States. Chia seeds have gained attention as an excellent source of omega-3 fatty acid.
